As dietary and culinary trends shift, the popularity of the sweet potato continues to rise. Always widely esteemed for their health properties, sweet potatoes and their many culinary uses—whether in sweet potato fries or a variety of ethnic cuisines— are now a fixture vegetable in consumers’ diets.
These culinary uses highlight another aspect of the sweet potato that has not always been appreciated: its versatility. Although traditionally associated primarily with holiday meals, sweet potatoes can contribute successfully to any number of foods, including savory meals. Our technical team has recently done extensive testing on one unexpected use for our dehydrated sweet potato flour and dehydrated sweet potato granules. Testing has indicated that both formats of dehydrated sweet potato have great potential for use in meat applications, serving as a functional and highly nutritional meat extenders in ground products.
