Ingredients:

  • Carolina Craft fine grind: 75%
  • Brown sugar: 10%
  • Sugar: 5%
  • Salt: 4%
  • Ground black pepper: 2%
  • Ground red pepper: 1%
  • Ground paprika: 1%
  • Ground mustard seed: 1%
  • Ground cloves: 0.5%
  • Ground ginger: 0.5%

Procedure:

  • Blend all ingredients until well mixed.
  • Place in tightly sealed container to maintain free-flowing properties.
  • Avoid high humidity and elevated ambient temperatures.
  • Apply seasoning rub liberally to both sides of desired meat or seafood, making sure surfaces of food are patted dry prior to application.
  • Place coated meat or seafood in smoker, as per usual methodology.
